HOW TO MAKE FLUFFY CUPCAKES

The week before I called my mother and asked her what was the secret to making the cupcakes perfect? I told her that I wanted to reproduce them as she made them, so this recipe is my mother’s and I am sure that if you follow the steps as I explain them, you will have a cupcake that will take you back to your childhood. I also leave some tips to have fluffy vanilla muffins with a cotton texture.

INGREDIENTS
200 g of wheat flour
160 ml milk
2 tablespoons vanilla extract
200 g of egg (3 size L)
100 g plain sugar
100 g unsalted butter
1 ½ baking powder
Pinch of salt

Well let’s start with the recipe for vanilla muffins and you will see how easy they are to make like everything we do in sweet desserts.

INGREDIENTS FOR VANILLA CUPCAKES:
200 g of wheat flour
160 ml milk
2 tablespoons vanilla extract
200 g of egg (3 size L)
100 g plain sugar
100 g unsalted butter
1 ½ baking powder
Pinch of salt

INSTRUCTIONS

1. The first step is to put the butter at room temperature together with the sugar in a bowl and we will begin to beat for approximately 5 minutes or until we see that the two ingredients are well integrated.

2. The second step is to add the eggs, once we have perfectly integrated the sugar and butter, we will add the eggs one by one, beating for 3 more minutes and you will see that the mixture will be homogeneous and with a smooth texture.

3. Now we will add the flour together with the yeast, it is important to sift these ingredients to avoid lumps and add little by little. With the help of the rods we will integrate the flour into the mixture, I recommend you start doing it with the rods turned off so that we will avoid the flour from flying out and we will begin to beat at the lowest speed each time we add a bit of flour.

4. Once we have the flour integrated, we will add the milk and the vanilla extract, we must add the milk while we continue beating the mixture, once all the ingredients are integrated we will begin to fill the mold with the mixture.

5. We will only fill the capsules in the mold halfway so we will prevent them from overflowing while they are baking.

6. Now we will put them in the preheated oven at 180º for 20 minutes, when the 20 minutes elapse with the help of a toothpick we will verify that the muffins are made, if not, we will leave them for 5 more minutes, I remind you that each oven is different.
